Chambo

Chambourcin grapes have red juice and red flesh giving the finished wine a deep violet colour. The nose is driven with spice and sweet dark berries with the palate consisting of rich cherry flavours and a touch of sweetness due to the vines being high yielding. Grown on Sandy alluvial soils, this variety prefers coastal climates and is highly disease resistant.

The fruit is hand and machine harvested to preserve the berries and capture the most amount of flavour as possible. Crushed immediately after harvest and then fermented on skins and flesh in stainless steel fermenters to enhance colour and develop tannin structure. After ferment, the wine was then aged in French oak to soften tannins and impress the wine with a hint of vanilla.

Food Pairing: Rich, marinated meats and roasted vegetables. Best with glazed duck or rosemary roasted lamb.
